recipe from Chef Nicolas Conraux: Oysters with Buckwheat cream

You can replace the oyster with shiitake mushrooms or a piece of white fish

 

Ingredients (for 2 people):

20g flour of buckwheat

20cl of clear chicken or veg stock

25g of butter or olive oil ot ghee

10g of buttermilk

6 oysters N ° 2 hollow or 6 shiitake

100g of heavy cream creamy goat cheese or soy yogurt

Salt

Xéres or cider vinegar

Buckwheat pancakes ( optional )

Dulse seaweed ( optional)
